Cauliflower Korma with almonds


If you love a creamy fragrant curry, then this recipe is for you. Not only is it full of flavour with a tasty bite, it serves 4 people for just 94p each. 

Cauliflower was made for curries. It absorbs the spices so when you bite into each floret, you're never lacking on flavour throughout the whole dish. Throw in some juicy sultanas and crunchy flaked almonds for the perfect balance of richness, juicyness and crunch. 

I love showing that healthy food doesn't need to be expensive, so to celebrate Meat-Free Week 2015, I'm costing up my favourite go-to recipes, like this one. 

These prices are estimated from a Tesco shop in March 2015: 

1 tbsp sunflower oil- 2p 
1 onion- 10p 
2 cloves of garlic- 5p 
1 medium cauliflower- £1
2 tbsp medium curry paste- 15 
1 tsp cumin- 4p  
1 tsp turmeric- 4p  
2 cans of full-fat coconut milk- £1.30
2 handfuls of spinach- 50p 
1 tbsp sultanas- 5p
1 tbsp flaked almonds-20p
Pinch of sea salt- 1p 
Handful of fresh coriander- 30p

To serve 4: £3.76

Serves 4 

Ingredients 
1 tbsp sunflower oil 
1 onion, chopped finely 
2 cloves of garlic, crushed 
1 medium cauliflower, chopped into small florets 
2 tbsp medium curry paste 
1 tsp cumin 
1 tsp turmeric 
2 cans of full-fat coconut milk 
2 handfuls of spinach 
1 tbsp sultanas 
1 tbsp flaked almonds
Pinch of sea salt 
Handful of fresh coriander, chopped roughly 

Method 
1. In a large pan, heat the oil and onion over a medium heat for 2-3 minutes until the onion has started to soften. Add in the garlic and cauliflower florets and cook for another 2-3 minutes. 
2. Stir in the curry paste, cumin and turmeric and ensure the cauliflower is coated. Pour in the coconut milk, reduce the heat to low-medium and simmer for 25 minutes until the cauliflower has softened but still has bite. The coconut milk will thicken. 
3. Add in the spinach, sultanas and almonds and cook for 5 further minutes. 
4. Season with sea salt and fresh coriander just before serving.

  1. This looks really nice- and I love it that it's costed, too! We make something similar, but I make a cream out of ground cashews and almonds instead of the coconut milk. Tomatoes, cauliflower, green beans, pepper, pumpkin, sweetcorn and peas all work beautifully with it. thanks for sharing this :)
